Banjar's Signature Banana Bingkang

Traditional cakes always have a story in every dish prepared. Many traditional cake menus have a long history of how the cake was prepared to what purpose the cake was prepared. Including the cake I prepared today, it has a long history during the royal era. This cake is a dish for the nobles although there may be slight differences in the recipe between then and now. In the current era, this cake is often prepared during traditional events or religious events. Even now, this cake is made as a snack to relax while drinking tea or coffee.

Bingkang pisang is processed banana with a mixture of flour and coconut milk. This cake is one type of traditional cake in the form of wet cake, originating from the banjarmasin tribe in South Kalimantan. The cake is often known as banana bread even though its texture is not similar to bread. But it is quite known as banana bread, well besides that this traditional cake is quite easy to prepare at home baked with reflon or any mold will make it cook faster.

Ingredients Needed

3 ripe bananas
200 grams flour
300 ml coconut milk
1 spoon butter
¼ teaspoon salt
2 tablespoons sugar
Yellow coloring to taste

Making Procedure


Prepare the bananas first, peel the skin then cut into small pieces, leaving 1 piece for the dough.

Add 1 banana to another container then crush and add salt.

Prepare flour and sugar mix in a larger container. Then add the banana and coconut milk.

Stir the mixture until it is well blended then add the yellow coloring and stir again.

Add the melted butter then add the banana pieces.

If the dough is right, bake it on Teflon or a round mold like mine, bake until the bottom is cooked until brownish yellow.

The end result is a beautiful, brightly colored cake with a very fragrant aroma of banana and coconut milk combined. Just imagine when this cake was baked the aroma in the kitchen made me hungry. I tasted one slice, yeah it was perfect, the savory coconut milk and sweet banana were just right. I love how moist and soft the cake is, anyone who sees this directly will definitely be tempted especially if you are a banana lover. This banana frame will definitely be a recommendation for all of you.
