Yes, tofu for lunch!

I made a tofu 'egg' salad for lunch, with tofu instead of eggs. It was really good!

I got the recipe from Instagram, where vegan.roey shared it. It's pretty easy to make with tofu, vegan mayo, mustard, nutritional yeast and some salt, turmeric and pepper.

My first time eating raw tofu! In this recipe it really works quite well to take the place of eggs. Tofu works well scrambled too, although when making scrambled tofu, I'd advice freezing the tofu first, so you can get rid of most of the moisture and let it absorb more flavor of whichever seasoning you prefer.

I love tofu and eat it fried, steamed, a bit raw or part of the many dishes we have that has been influenced by the Chinese.

While I have known it is a meat substitute I never i knew it could be an egg subsititute and I'll look for that egg salad recipe using tofu.

I love egg salad but some variation would be awesome
