Cake Pop Superfood Energy Bites

Cashew Nuts and High Protein Granola make the perfect Energy Bites Cake Pops! I personally love making this sweet cute ball and a no-bake recipe for cake pops. And they fit well with this coming week's topic on Hive Top Chef, "Cake Pop".

When I created this recipe, I wanted to make a quick and easy dessert that satisfied myself and everyone in my family without feeling any guilt, and feel free to have these little balls as a cute dessert.

These superfood energy balls are loaded up with all the good stuff such as cashew nuts, dates, fig syrup, vegan chocolate chips, cocoa powder, coconut butterscotch sauce, and high protein granola. These little energy balls are a perfect on-the-go smart snack!

For an extra treat, I roll these superfood energy bites in Vegan Blueberry White Chocolate shortening and easy cocoa powder coating. Top with sprinkles and allow to harden in the fridge for a few minutes and then enjoy!

It’s not a cake pop without a dip in chocolate! I do two ways of coating and DIY sticks.

 

  • Melting margarine, cocoa powder, and sweetened condensed creameries are preferred for my chocolate coating but you can just use what you have on hand.

  • It is possible to use dark chocolate for coating the energy bites. I go with store-bought Vegan Blueberry White Chocolate Shortening that is sweetened with coconut sugar, coconut milk powder, and shortening.

  • I did replace the plastic white lollipop sticks by using the homemade DIY cake pop stand instead, which is save money and easy way to make a dazzling cake pop presentation. I did stain the wooden skewers with pink food coloring.

  • Of course! Anything can sprinkle on top so feel free to top them with anything that you have in the kitchen.

These superfood energy bites are packed with nutritious ingredients. And here are a few things from this recipe to combine together for making these Cake Pop Superfood Energy Bites.

  • I just use coconut butterscotch sauce since it generally contains virgin coconut oil and I didn't add any more oil or water to this recipe.
  • High Protein Granola really comes in convenient for this recipe to create the perfect crunchy and healthy which is possible to substitute with hemp seeds, flax seeds, or oatmeal.
  • I used fig syrup because I've them at home so you can use maple syrup or any syrup as a sweetener and feel free to adjust the sweetness following your taste.
  • Other nuts like almonds, walnut, or pecan should work fine as a replacement. Just be sure to use the good quality healthy nuts.

Ingredients for Superfood Energy Bites.

 

  • 1/2 Cup Medjool Dates
  • 1/2 Cup Cashew Nuts
  • 1 Tablespoon Coconut Butterscotch Sauce
  • 1 Tablespoon Fig Syrup
  • 1 Tablespoon Cocoa Powder
  • 1/2 Cup Chocolate Protein Granola
  • 1/2 Cup Chocolate Chips

Ingredients for Cake Pop

 

  • 12 Sticks
  • 1 Tablespoon Margarine
  • 1/2 Tablespoon Cocoa Powder
  • 1/2 Tablespoon Sweetened Condensed Creameries
  • Any Topping that Already Has in the Kitchen

How to Make Cake Pop Superfood Energy Bites

 

STEP 1 - DIY Stained Cake Pop Sticks with Food Coloring

 

Mixed the pink food coloring and vinegar in the plastic container, and let the wooden sticks sit in the container for about 30 minutes. Then set them in the tray and spread it out into a single layer and let them dry before use.

STEP 2 - PIT THE DATES

 

Use a small pairing knife and slice down into the date. Then will hit the pit and pull open the date and remove the pit.
 

 

STEP 3 - FORM THE ENERGY BITES

 

Place the dates in the food processor and add the cashew nuts for making the energy balls to a food processor.

Pulse several times until the dates and cashew nuts break into small bits and form a ball that sticks together.

Move the mixture of thick cashew nuts and dates into a mixing bowl.

Put the chocolate protein granola and chocolate chips into the same food processor and pulse until the mixture is broken down into small pieces but not completely smooth.
 

 

Move the mixture of the thick protein granola and chocolate chips into the same mixing bowl and then add the cocoa powder, fig syrup, and coconut butterscotch sauce. Then combine the ingredients with a silicone spatula.

At this point, the dough will look like crumbs

STEP 4 - ROLL THE ENERGY BITES

 

Roll the dough into balls and I did slightly over 1 inch and ended up with 16 energy balls.

STEP 5 - INSERTS THE STICKS

 

Melted Vegan Blueberry White Chocolate Shortening in a small microwave-safe bowl. Microwave until melted and insert a DIY wooden strain into the bottoms of each cake pop for the holding sticks.
 

 

Pop in the refrigerator for 1 hour or so more hours to allow the balls to set as the solid for the next step of the coating process.

STEP 6 - COATING WITH COCOA POWDER

 

Melted the margarine in the microwave for a few seconds, then add the sweetened condensed creameries and cocoa powder. Stir all ingredients together until the cocoa powder dissolves.
 

 

Dip a stick of energy bites into the melted cocoa powder coating and turn around to coat all over the energy bites.

Fill a decorative and sprinkle on top. Repeat with the remaining energy bites sticks for about 6 sticks. Place and chill in the refrigerator for about 5 minutes more or just until the coating gets harder.

STEP 7 - TEMPER BLUEBERRY SHORTENING WITH A MICROWAVE

 

Temper the shortening by chopping the blueberry shortening into small pieces and placing it into a small microwave bowl. Put the bowl into the microwave and melt on high in 30-second bursts, and keep stirring gently with a silicone spatula. Repeat the process about 4 times and keep stirring until the blueberry shortening completely melts and shines like a crystal.
 

 

STEP 8 - COATING WITH BLUEBERRY SHORTENING

 

Once the blueberry shortening is completely melted, then dip the frozen energy bites one at a time into the melted blueberry shortening coating. Top with sprinkles and allow to harden in the fridge for a few minutes until the blueberry shortening turn harder.
 

 

STEP 9 - SERVED

 

To hold each Cake Pop Superfood Energy Bites in place fill a 16-ounce cup (or any container as you wish) with the cute stone or sugar. Place the end of the energy bites cake pop and pop the stick in the stone, making sure it is secure before serving them.

Leftover Cake Pop Superfood Energy Bites can be stored in a zip lock bag or a sealed glass container and refrigerated for up to 1 week or frozen for up to 3 months in the refrigerator.

It is the first time I see vegan cake pops and I must tell you that they have been visually very attractive, the mix of flavors must be great and even more the style you have given them by combining colors and ingredients that besides adding flavor add texture to these cake pops, the traditional ones are not usually very crunchy.

I loved the decoration, thanks for sharing!

These look soo good and such a beautiful presentation and post. Protein balls are the best fast and easy snack. Love those frangipani flowers. They smell so good.
