HEALTHY EATING π₯ / DIY OF HOW I PREPARED BASMATI RICE WITH FOUR DIFFERENT VEGETABLES π

One of the most beneficial soup I know, which is popularly and generally recommended is vegetable soup.

Vegetables are very beneficial to the health, some of it are:
It aids digestion.
It makes your skin very radiant.
It promotes cardiac functioning.
It strengthen the immune system and the bones.
It helps in weight loss.
It is rich in nutrients, vitamins, iron, fiber, minerals.
It builds muscular strength.
It reduces the risk of cancer, high blood pressure, obesity, heart disease and type-2 diabetes.
To mention but few.
Vegetables are mostly included in my mum's food once or twice daily.
She told me she would be going to visit her younger sister whom is also leaving in the same town with us and she would want me to prepare her breakfast which is Basmati Rice and vegetable soup for two. So she can package her own portion and give to her.
Her sister is also suffering from high blood pressure and diabetes. So the food is actually the right diet because Basmati Rice is also suitable for diabetes and obesity.
So let's dive into the preparation process, we begin with the basmati rice.
Measure out your rice into a container and soak with a lukewarm water for about 30 to 45 minutes.

After 45 minutes, rinse properly like 3 to 4 times.

Place a clean pot on fire and add some water to boil the rice.
Once the water is fully boiled, pour your basmati rice into it and add very little salt then cover to cook for about 10 to 15 minutes.
Then your basmati rice is ready.



So next to the preparation of vegetable.
I used 4 different types of vegetables which are:
Bitter Leaf (Ewuro).
African Basil (Efirin).
Tree Spinach (Iyanapaja).
Amaranth Greens (Tete).

I boiled the Bitter Leaf to reduce the bitter taste of it.
I also boiled the Amaranth Greens to remove the unwanted colored particles.
I soaked the African Basil and Tree Spinach in cold water after rinsing.
Then I begin the cooking process.
Placed the clean pot on fire and added little palm oil then let it heat up for few seconds.

I added the grated pepper and onion.


Then I added the already grinded locust beans, about 8 spoons because of the health benefits.
Then I added salt and seasoning.



Stir together and let it fry for about 2 minutes before adding any vegetables.

After 2 minutes then I started adding the vegetables one after the other.




Stir well together to mix and let it cook for about 2 to 3 minutes for all ingredients to settled in and absorbed with the vegetable.
Then your vegetable is fully ready to be served.
I served my aunt's portion and packed inside a disposable take away.
And I am more than glad that she loves it π
