Hoy traigo esta receta deliciosa; se trata de auyama al curry, es fácil y rápido de preparar y saludable, la calabaza contiene muchas propiedades una de ella es la fibra que favorece la reducción de los niveles de colesterol, es muy buena para la digestión y muy pocas calorías además de vitaminas y minerales por eso es muy bueno consumirla. Aquí les dejo el paso a paso de esta sencilla receta
Today I bring this delicious recipe; it is about pumpkin curry, it is easy and quick to prepare and healthy, pumpkin contains many properties one of them is the fiber that favors the reduction of cholesterol levels, it is very good for digestion and very few calories plus vitamins and minerals so it is very good to consume it. Here is the step by step of this simple recipe.
500 grs de auyama, 02 cucharadas de aceite de oliva, 02 dientes de ajo, 01 cebolla, 02 cebollin, 01 cucharada de curry en polvo, 1/2 taza de agua o caldo de verdura, 01 cucharada de ajonjolí, 01 cucharada de cilantro.
500 grams of pumpkin, 02 tablespoons of olive oil, 02 cloves of garlic, 01 onion, 02 chives, 01 tablespoon of curry powder, 1/2 cup of water or vegetable broth, 01 tablespoon of sesame seeds, 01 tablespoon of coriander.
Comienzo esta sencilla receta, lavando y cortando la auyama en cubos y la cebolla y el cebollín finamente picados.

En una olla coloco el aceite de oliva y rehogo el ajo machacado, la cebolla y el cebollin hasta que estén transparentes.

Luego añado la auyama revuelvo y dejo cocinar unos segundos para luego incorporarle el agua.
I let it cook for a few seconds and then add the water.
Sazono con sal, pimienta y el curry
Season with salt, pepper and curry.
Mezclo muy bien y cocino tapado a fuego bajo por espacio de 30 minutos ó hasta que la auyama haya ablandado.
I mix very well and cook covered over low heat for 30 minutes or until the pumpkin has softened.
Y listo!. Al servir espolvoréo el ajonjolí y el cilantro finamente picado, para así degustar de un delicioso y nutritivo plato. Buen provecho!
