Cucumber Juice

Have you ever made that greek salad/dip called Tzatziki ? If yes, what do you do with the liquid squeezed out of your grated cukes? I hope you are not throwing the liquid because it is one of the healthiest drinks around. In this post , I will be sharing with you how I make this very simple but very healthy drink. Btw, Tzatziki is a greek dip composed of shredded cucumber, crushed garlic, goat or sheep cheese and greek yogurt.

As a result of extracting its liquid, I turned it into an amazing drink that truly quenches my thirst especially on a hot day. Well, Spring has just arrived here but most of the days are now becoming warmer and this drink has become a favorite that truly is a health booster.

Cukes from my container garden....

I am a fan of container gardening and some of my cuke juices come from the harvest of the cukes especially in Summer. I do not harvest all at once since the flowers continue to grow one after the other. So there is a continuous growth of the fruit especially when properly given water and feed. When I used the shorter cucumber, I remove the seeds before I grate them. In today´s recipe, I used the long variety which is so common in the market since the planting season is just about to begin.

I can only plant vegetables in containers especially the salad greens upstairs on my terrace. We have a backyard tho, but the slugs are so many especially after the rain, the time they all come out from hiding, attack the plants overnight leaving devastations.

Benefits of Cucumber Juice:

Although there are conflicting informations on the benefits of the cucumber juice, I still believe that this juice is healthy especially if it does not contain sugar. Here in this recipe I have added stevia liquid, a plant based sweetener to replace sugar.

It keeps you hydrated , helps weight loss, delivers antioxidants, may help prevent cancer, lowers blood pressure, supports healthy skin, and boosts bone health. Source.

As far as the hydration is concerned , it is very good for as long as you do not drink the finished products sold in supermarkets because most of them contain sugar ... it has been said that home made ones has that purpose of lubricating the joints as well as help nutrients delivered to the body cells. So if we drink this, in my opinion, it should really boost positive result for the body.

Cucumber Juice

Ingredients: (For 2 glasses)

2 long cucumbers
1 lemon, cut 1 slice and extract the juice of the rest
Stevia liquid ( sugar substitute)
mineral water
ice cubes (optional)

Preparations:

1...Peel the cucumber and cut into 3 parts.

2...Grate the cucumber parts...

3... Extract the juice by using a clean kitchen cloth and wring the cloth until all the juice are pressed-out.

4... When all the cuke liquid is extracted, put the juice in a bowl or container, add 1/2 lemon juice, add stevia liquid according to your taste. Put the juice finally in a drinking glass, add 1/2 cup of mineral water for each glass and add ice if you want ...and a lemon slice on the glass edge for aroma and decor.

Oh I LOVE cucumber juice and use cucumbers as a basis for lots of hot season drinks. My current fav? Cucumber, rose apple and a little watermelon juiced together and served with a squeeze of fresh lime. SOOOO refreshing.

I also use cucumbers as an alkalysing natural medicine food and that's part of why we ALWAYS have them in the house, eat them most every day and add to all sorts of veggie-juice combos and salads.

I have learned that the skin of the cukes has even more nutrients more than the fruit itself... the only doubt is most farms in Europe especially in Spanish tents, they use sprays for the parasites that might invade the plant...so even if they use the word organic, I am still not convinced that they are really organic.. so I am careful with the skin of cukes.

Organic MATTERS. We always buy organic and juice them. Cant honestly remember the last time I peeled a cucumber. 😆

I would save all that goodness for sure. Drink it, put some on your face to frim, and I would put some in my handmade soap. Waste not!
