Hello My Dear Little Witches...!

Today is Fruits and Veggies Monday, the perfect excuse to encourage my family to consume at least for one day only vegetables, at breakfast I served them a fruit salad with some delicious carrot pancakes, these are the favorites of My Mathias, and for lunch I wanted to prepare a delicious red lentils minestrone. The lentils remind me of my maternal grandmother, the truth is that her strong point is not the kitchen, I do not remember a delicious meal that she has ever prepared for me, except for the coffee, her coffee is delicious, I remember when we were little and we used to visit her house, Usually there were all my cousins, my uncles were dedicated to have descendants, in total between my three uncles add up to 13 grandchildren for my grandmother, plus my brother and I were 15 grandchildren in total, running around the yard of his old house, a real madness, now that I think about it, poor my grandmother hahaha.


Well, this was the food that my maternal grandmother used to prepare when we visited her, the truth is that her resources were not enough at that time. She always said that lentils are good for you, and the truth is that they are very good for you, that is why in some places they are considered a symbol of abundance. Certainly, they didn't fit at all, that's why I avoided them for a long time, it was until a few years ago that I learned how to prepare them and the truth is that they are delicious, besides being so versatile, we can make a wide range of recipes with red lentils, cookies, breads, vegetable meat, falafel, lentil hummus, even lentil aquafaba is one of my favorites, I have really come to love lentils, so every time I have the opportunity I use them for some delicious recipe.


For lunch today I decided to prepare this delicious lentil soup, since I haven't been making them for a long time and my father loves them as much as I do. Besides, this is one of the easiest dishes you can find. To begin with, you just have to cook the lentils in abundant water until they are soft, this will take between 30 and 60 minutes, I try not to use a pressure cooker to cook them, because they have to cover the pressure valve and it is a great danger, because they can explode. Once our lentils are soft, we add the sofrito of vegetables and greens, for this occasion I sauté onions until they crystallize, add half a stem of finely chopped celery and a quarter cup of chopped garlic, we sauté for a couple of minutes to continue adding a chopped green pepper, add a large carrot cut in cubes and 2 medium potatoes equally cut, stir for a couple of minutes and season. To season I use salt, cumin and a mixture of oregano, thyme, and turmeric powder, this adds a delicious flavor, I add some lentils to the vegetables and stir and back to the pot.


Once everything is in the pot I add a couple of cups of pastry or macaroni, and I let it cook until the vegetables and pasta are soft, this time is enough for the flavors to concentrate and we have a delicious minestrone. This recipe can be made with any legume we have on hand, however, lentils provide much more protein than chickpeas and even any animal meat. They are very nutritious thanks to the amount of vitamins and minerals they provide to our body, help prevent and control anemia, also help our nervous system, and control the levels of bad cholesterol in our blood. The truth is that lentils are wonderful, from every point of view, represent a nutritious, economical and productive food, and that many will easily love.

Hola Mis Queridos Brujitos...!

Hoy es lunes de Frutas y Verduras, la excusa perfecta para incentivar a mi familia a consumir al menos por un día solo vegetales, en el desayuno les serví una ensalada de frutas con unas deliciosas panquecas de zanahoria, estas son las favoritas de Mi Mathias, y para el almuerzo les quise preparar un rico minestrone de lentejas rojas. Las lentejas me hacen recordar a mi abuela materna, la verdad es que su fuerte no es la cocina, no recuerdo una comida deliciosa que me haya preparado nunca, exceptuando por el café, su café es delicioso, recuerdo cuando estábamos pequeños e íbamos de visita a su casa, por lo general estaban todos mis primos, mis tíos se dedicaron a tener descendencia, en total entre mis tres tíos suman 13 nietos para mi abuela, más mi hermano y yo éramos 15 nietos en total, corriendo por todo el patio de su vieja casa, una real locura, ahora que lo pienso, pobre de mi abuela jajaja.


Pues esta era la comida que preparaba mi abuela materna, cuando íbamos de visita, la verdad es que sus recursos no daban para más en aquel entonces, ella siempre ha dicho que las lentejas son rendidoras, y la verdad es cierto, son muy rendidoras, por eso en algunos sitios es considerada como símbolo de abundancia. Ciertamente no le quedaban nada bien, es por esto que bastante tiempo las evite, fue hasta hace unos cuantos años atrás que aprendí a prepararlas y la verdad es que me quedan deliciosas, además de que son tan versátiles, podemos hacer una amplia gama de recetas con las lentejas rojas, galletas, panes, carne vegetal, falafel, hummus de lentejas, incluso la aquafaba de lentejas es de mis favoritas, realmente he llegado a amar las lentejas, así que cada vez que tengo oportunidad las uso para alguna receta deliciosa.


Para el almuerzo de hoy decidí preparar esta deliciosa sopa de lentejas, ya que desde hace un buen rato no las preparaba y mi padre las ama al igual que yo, además esta es una de las cocciones más fáciles que puedan encontrar. Para comenzar solo deben cocinar las lentejas en abundante agua hasta que estén suaves, esto tomara entre 30 y 60 minutos, trato de no usar olla a presión para cocinarlas, ya que tienen a tapar la válvula de presión y resulta un gran peligro, pues pueden explotar. Una vez suaves nuestras lentejas, agregamos el sofrito de vegetales y verduras, para esta ocasión sofreí cebollas hasta cristalizar, agregue medio tallo de celeri finamente picado y un cuarto de taza de ajo porro picadito, salteamos por un par de minutos para continuar agregando un pimiento verde picado, agregamos una zanahoria grande picada en cubos y 2 papas medianas igualmente cortadas, revolvemos por un par de minutos y condimentamos. Para condimentar utilizo, sal, comino y una mezcla de orégano tomillo y cúrcuma en polvo, esto le agrega un delicioso sabor, agrego un poco de lentejas a los vegetales y verduras revuelvo y de nuevo a la olla.


Una vez todo en la olla agrego un par de tazas de pastina o macarrones, y dejo cocinar hasta que los vegetales y la pasta estén suaves, este tiempo es suficiente para que los sabores se concentren y nos quede una deliciosa minestrone. Esta receta la podemos hacer con cualquier leguminosa que tengamos a la mano, sin embargo, las lentejas aportan mucha más proteína que los garbanzos e incluso que cualquier carne de origen animal. Son muy nutritivas gracias a la cantidad de vitaminas y minerales que aportan a nuestro organismo, ayudan a prevenir y controlar la anemia, además ayudan a nuestro sistema nervioso, y a controlar los niéveles de colesterol malo en nuestra sangre. La verdad es que las lentejas son maravillosas, desde todo punto de vista, representan una comida nutritiva, económica y rendidora, y que fácilmente muchos amaran.

I do love a hearty minestrone like this! Lentils really are so versatile and good for you. I always keep a few different kinds of dried lentils in my pantry to have them ready for a yummy meal. That soup just looks so fabulous. I would be happy to have a bowl myself. :)
