Cinnamon Rolls (Vegan & Gluten-Free)

Today I chose to remake one of my all-time favorites: cinnamon rolls.

Vegan and gluten-free cinnamon rolls are a wonderful treat for those with dietary restrictions. These rolls are soft, sweet, and full of cinnamon flavor, perfect for breakfast or a special dessert. Here's how to make them.

Ingredients:

  • 1 1/2 cups gluten-free flour blend (ensure it contains xanthan gum)
  • 1/2 cup almond flour
  • 1/4 cup tapioca starch
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup coconut oil, melted
  • 2/3 cup non-dairy milk (like almond or soy milk)
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons maple syrup or agave syrup
  • 1 teaspoon vanilla extract

For the Filling:

  • 1/3 cup coconut sugar or brown sugar
  • 2 tablespoons cinnamon
  • 2 tablespoons coconut oil, melted

For the Icing:

  • 1/2 cup powdered sugar (vegan and gluten-free)
  • 2-3 tablespoons non-dairy milk
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (180°C). Grease a baking dish with coconut oil or line it with parchment paper.

  2. Make the Dough: In a large bowl, combine the gluten-free flour blend, almond flour, tapioca starch, baking powder, baking soda, and salt. In a separate bowl, mix the melted coconut oil, non-dairy milk, apple cider vinegar, maple syrup, and vanilla extract. Add the wet ingredients to the dry ingredients and mix until a dough forms. It should be soft but not overly sticky. If it's too dry, add more non-dairy milk, a tablespoon at a time.

  3. Roll Out the Dough: Lay a piece of parchment paper on a flat surface. Place the dough on the parchment paper and use another piece of parchment paper on top to roll the dough into a rectangle, about 1/4 inch thick.

  4. Add the Filling: Remove the top parchment paper. Spread the melted coconut oil over the dough, then evenly sprinkle the coconut sugar or brown sugar and cinnamon.

  5. Roll and Cut: Starting from one of the long edges, roll the dough into a log. Use a sharp knife to cut the log into 8-10 even pieces.

  6. Bake: Place the rolls in the prepared baking dish, cut side down, leaving a bit of space between them. Bake in the preheated oven for 25-30 minutes, or until golden brown and firm to the touch.

  7. Make the Icing: While the rolls are baking, mix the powdered sugar, non-dairy milk, and vanilla extract in a small bowl. Adjust the consistency by adding more powdered sugar or non-dairy milk as needed.

  8. Serve: Once the rolls are done baking, let them cool for a few minutes before drizzling with icing. Serve warm and enjoy your vegan and gluten-free cinnamon rolls!
