Stewed Mongo Beans & Veggies With Coconut Milk
It's vegan time my friends! My daughter has been craving pure veggies for our dinner so I prepared to cook mongo beans with coconut milk.
My ingredients:
1 cup mongo beans
1 slice squash, cubed
4 pcs Okra (lady's finger)
1 tbsp.Ginger, crushed
1 cup shredded moringa leaves
2 cups coconut milk
Salt and seasonings to taste
To make it fast, I boiled the mongo beans using my pressure cooker for 5 minutes only. That will save gas.:)
After keeping it cool, I added the squash and covered it once again until tender.
I got moringa fresh morenga ang shredded about 1 cup to go along with okra, ginger and spring onion.
After mixing the veggies, I poured the coconut milk and let it simmer for at least 5 minutes to prevent the okra and moringa from over cooking. It should be half done only.
Lastly, add salt ang seasonings to taste. Serve hot!
See it's so easy to prepare, right? Before, it's a layman's simple dish but nowadays, even a dish as simple as that is a treasure with all the commodities soaring market price! Yet, we still buy it because it's healthy and nutritious!

Iba talaga ang pagkaing Pinoy though each region has their own way of preparation. That's the visayan style kasi whereas in Tagalog region they don't add coco milk, right? They add ampalaya leaves and other stuffs. Thank you for your time dear!
Yes, true po. Here in Luzon they add in ampalaya leaves or even the fruit also moringa leaves as well.
First time to taste monggo with ampalaya because growing up in Cebu we add in malabar spinach or alugbati then of course the moringa.
I've tasted from the Ilocano's try add in squash leaves like the baby or new shoots para hindi magalas.
Here we add coconut milk to the monggo for desserts or sweetened condensed milk. It varies talaga.
