How I prepared nutritious and delicious Lotus root curry
Hello my fellow Vegan lovers,
What's up guys? I believe you are doing well. Greetings from Sri Lanka. Yesterday was my holiday and I was very quickly started to cook healthy vegan food for lunch. I asked from my wife, what's better to cook. After few minutes later she gave good idea to me. I went to local vegetable market and bought nutritious lotus roots. Many people don't know the healthy benefits of lotus root. I have heard some of useful advantages which we eat lotus root melas. So today I am going to sharing how I prepare delicious lotus root curry since our home.
Ingredients
- 200 grams of Lotus root
- Chopped Garlic
- Chopped green chillies
- Pandan leaves and curry leaves
- Chopped tomatoes
- Chopped onions
- Two tablespoons of oil
- Fenugreek 1/4 tsp
- Half a teaspoon of mustard seeds
- Turmeric powder 1/4 tsp
- A teaspoon of chilli powder
- Half a teaspoon of curry powder
- Half a teaspoon of black pepper powder
- Salt to taste
- Half a cup of condensed coconut milk
- 1/4 cup liquid coconut milk
Preparing method
- First wash the lotus root well with water. It is important to wash as much as possible as lotus tubers may contain mud and sand as they are formed in mud. Then cut them into small pieces.
- Heat a pan and add oil. When the oil is hot, add mustard seeds and splutter them.
- Then add fenugreek seeds and chopped garlic and fry.
- Now add chopped onions, pandan leaves, curry leaves and chopped green chillies to it. Then add black pepper powder and stir.
- Then add curry powder and chilli powder, stir and fry.
- Next, I added finely chopped lotus root to the spice mixture. Then Turmeric powder was added. Add 1/4 cup liquid coconut milk, mix and cover with a lid and cook for about 5 minutes.
- Then add salt as needed, add condensed coconut milk and cook a little. Then add the chopped tomato pieces and cook for another 5 minutes and remove from the heat.
Before cooked lotus root curry, we have prepared lotus root with mixed dhal only. So we didn't know how other lotus root recipe's taste. Now I understand better how we can enhance the delicous taste with added some spices. You can try this recipe via using preparing method.

This would be delicious with all of those nice ingredients and spices. I've never cooked with lotus root but I've had it. I must search for it in the Asian market and give it a try. Thanks for the recipe.
Yeah this would be delicious as well as nutritious. Many people don't know how to prepare lotus root. You can try this out when you find it from Asian market.
