Fried Vegetable Rice Vermicelli with Cuko Sauce

Fried foods aren’t healthy if eaten in excess. I think enjoying a moderate portion every now and then is a great way to prepare this dish and savor it while relaxing.




Fried Corn Vermicelli with Flour


These fried vegetable rice noodles are a truly delicious snack. They’re made by frying a mixture of flour, vegetables, and rice noodles. The process is very simple and easy—perfect for those who want a crispy snack to enjoy with the spicy, tangy, and savory cuko sauce.

I’ve actually shared the recipe for cuko sauce many times on Hive so feel free to check out my posts for instructions on how to make it. This sauce pairs exceptionally well with fried snacks like this. I usually enjoy it with empek-empek, but this time I thought it would be a fantastic match with these vegetable rice noodle fritters.

Ingredients

1 pack of corn vermicelli
3 cabbage leaves
1 carrot
1 stalk of chopped celery
3 cloves of garlic
1 shallot
5 bird’s eye chilies
150 grams of all-purpose flour
1 candlenut




Procedure Cooking


I soak the corn vermicelli in hot water for about 1 to 2 minutes until soft.

Then I pound the bird’s eye chili, shallots, and candlenut into a smooth paste. Add salt and mushroom broth while pounding.

For the vegetables, I chop them into small pieces, then mix them with the soaked vermicelli.

Mix with the coarsely ground spice paste.

Add all-purpose flour and stir until evenly combined, then add water until the batter is thick.

Scoop out a small spoonful of the batter and fry in hot oil until golden brown.

Serve on a plate, then add the delicious cuko sauce, followed by celery leaves and crispy fried shallots on top. The combination of the bakwan’s crispiness and the delicious cuko sauce is absolutely delicious. I really love this combination—savory, sweet, and spicy, with an extraordinary touch of flavor.
