Potato Satay With Gonseng Grated Coconut Seasoning
That day I was confused about what food to prepare for lunch at home. Lately, for some reason, my appetite has decreased a bit, perhaps because my physical condition is still not very healthy. Looking through the food stock in the kitchen I got some potatoes. This might be my last day here, I think I should prepare simple and easy food for lunch. Besides, the portion is only a little for one person so it will be done very quickly.
Potatoes Satay
This time I made sweet food, well I made processed potatoes with sweet spices combined with grated coconut. I roasted the grated coconut first so it tasted more delicious and the aroma made me really hungry. I use potatoes by cutting them into small pieces, and preparing them by boiling them first. It's not difficult, you can prepare it easily, come on, check out the recipe below!
Ingredients
50 grams of grated coconut
1 tablespoon palm sugar
1 tablespoon sweet soy sauce
½ teaspoon ground pepper
½ teaspoon salt
2 cloves of garlic
4 red onions
Sufficient skewers
A little notice for you!, this recipe does not require using skewers. If you don't have skewers, you can serve them directly, because I only use skewers during the serving process.
Creation Procedure
Peel the potatoes until clean, then cut into cubes according to taste.
Then boil the potatoes in enough water over medium heat until the potatoes are perfectly tender. So, if you don't want to boil this process, you can also steam it.
In another pan while waiting for the potatoes to boil I prepared the roasted grated coconut.
Roast the coconut until brownish yellow, using low heat when roasting, stirring continuously so that it cooks evenly.
Then puree the shallots and garlic using enough water.
Saute the ground spices with 1 tablespoon of cooking oil, then add palm sugar and sweet soy sauce.
Stir until evenly mixed, cook until thickened, then add salt and ground pepper.
Then add the roasted grated coconut and potatoes then stir both until evenly mixed. Immediately turn off the stove and serve with skewers.
Results
The potato satay is ready to be served. I pierce the potato with a skewer that I have prepared. I sprinkled the spices on top, the spices thickened a little, if you don't like it too sweet, you can skip the sweet soy sauce or reduce the palm sugar.
After I served it, and took photos of the results to show you, it was my turn to relax and taste it. Ahh, what a surprise, really beyond my expectations, it turns out that potatoes processed with grated gongseng kalapa are very tasty and different.
