Palm Sugar Pumpkin Cake
This cake is processed yellow pumpkin with a sweet combination of palm sugar. Palm sugar has a delicious and soft texture it would be really great if made into this cake. How could it not be that yellow pumpkin has an extraordinary taste? Just imagine if you boil it, the pumpkin is already very delicious. Moreover, it is processed using other supporting ingredients which will create an extraordinary taste.

Ingredients
200 grams of wheat flour
2 tablespoons tapioca flour
50 grams of palm sugar
100 ml thick coconut milk
¼ teaspoon vanilla powder
½ teaspoon salt
¼ teaspoon baking powder
Creation Procedure
Prepare the pumpkin, remove the pumpkin seeds, then peel the pumpkin skin until clean. So, during the peeling process, you have to be careful because the pumpkin skin is very hard.
Then cut the pumpkin into cubes or according to taste.
Next, blend the pumpkin with a little coconut milk until smooth.
Pour the pumpkin into a container then add the flour.
Stir until evenly mixed, then add the coconut milk slowly while stirring.
Add baking powder and vanilla and also additional salt.
Add granulated sugar and stir until evenly mixed until medium thick.
Grease the mold with a little oil, then add the mixture until it is full in the pan.
Wait until half cooked, then add finely chopped sugar. Wait until it is cooked then remove from heat, the cake is ready to be enjoyed.
Results
Yellow pumpkin cake with aten sugar topping is ready to be enjoyed, serve it at certain moments with your family. So here I asked my mother to taste it, right at that time my mother had just come home from the rice fields, so she really wanted a snack. I also served it on a serving plate with a glass of warm drink. And did you know my mom says it's delicious. However I say this dish is not that perfect that I failed actually for its shape and texture.
Actually, this cake was my first attempt. However, there is something surprising here, because my pan is new, so my cake was damaged several times and stuck to the pan. Initially I used Teflon but the shape was wrong. But after trying several times I got a better final result. Even though the shape is not perfect, seeing that the texture and taste are perfect, even my mother likes it, makes me very happy.
